Asian Inspired Wings

One of my favorite things to grill are wings, but I wanted to try something different. These Smoked Asian Inspired wings sounded perfect.

First lets start with a marinade. The marinade will keep the wings moist and give them plenty of flavor.

  • 2 lbs chicken wings

  • 2 cloves garlic chopped

  • 1 inch piece ginger chopped

  • 2 Tbsp brown sugar

  • 2 Tbsp chili garlic sauce

  • 2 Tbsp rice vinegar

  • 2 Tbsp soy sauce

  • 3 Tbsp hoisin sauce

  • 1 tsp kosher salt

  • 3 Tbsp sesame oil

Put the chicken wings in a gallon ziplock bag and pour in the the combined ingredients. I marinated these wings for 12 hours.

I fired up my Kamado Joe using some Rockwood Lump Charcoal and used some Rockwood Cherry wood chunks for the smoke. The cherry wood gives a nice mellow smoke flavor and a great color. I normally smoke/grill my wings around 300-325 degrees. This allows some smoke to penetrate but the skin turns out great.

I like using my Kamado Joe for wings because with the diverter plates in place, I can run hotter temps and get the bottom of the wings slightly charred. This gives them a great flavor.

The smell while grilling these wings was insane. I could easily smell it from far away. I like to grill my wings until the internal temp of the wing is around 175. For these wings there is really no need to sauce or glaze them.  The taste is just that good.

Next time I may make a honey glaze and try it on a few wings for something different.
