Stuffed Grilled Chicken
Sometimes something so simple can taste so good. This is one of those recipes. Once you try this recipe you will be asking yourself why I haven't tried this sooner.
Required Ingredients:
Chicken Breast
Parmesan Cheese (its worth it to get the good stuff)
Fresh Basil
Butchers Twine
You can use a full size chicken breast (as pictured) and cut a slit in the breast to add the ingredients. If you want something smaller try making a chicken roll up instead.
Apply a coating of PorkU Garlic Rub to the inside of the chicken breast.
Grate the Parmesan cheese, and chop the fresh Basil. This will go inside of the chicken. Use as much as you would like. You cant go wrong with cheese!
Next wrap the chicken breast, in two spots, using the butchers twine. Tie it off (see the picture below as an example).
If you have a charcoal grill (like a Weber Kettle), use it for this. You can use a gas grill but it wont add the flavor of the smoke like the charcoal grill.
You want to setup the grill for indirect heat. This means the coals (or flame) is on the opposite side of the grill to where you place the chicken.
Your grill should be around 350 degrees. Cherry or Apple wood is a good choice if you want a smoked flavor. I used Cherry wood this time.
You can brush on some melted butter with some lemon zest for some extra flavor.
The chicken should be done when the chicken breast internal temperature is 165 degrees F. Always go by temperature and not by time.
