Carne Asada
If your ever looking for something easy to grill but you need the taste to impress, then look no further. Carne Asada is such a simple but great recipe.
You can use a flank steak or a skirt steak. This time I used a Grass Fed Skirt Steak and I would choose this cut again in a heartbeat. It was only $5 a pound at my local supermarket.
The secret to some great tacos is a great mojo (marinade).
2 Juiced Limes, 1 Handfull of chopped fresh Cilantro, 3 Garlic Cloves Chopped and 1/2 cup of Olive Oil. Mix all of this up and put it in a large zip lock bag. I used about 1.5 lbs of Skirt Steak. Marinade for 1-3 hours. Don't marinade it too long.
I used my Weber Kettle and some lump charcoal. I had the heat around a medium heat and grilled it directly over the coal side. Take the Skirt Steak out of the marinade and put it directly on the grill. I grill the top side until I got the color that I wanted. Then I flipped it. I removed it from the grill when the steak temp'd about 135 degrees F.
Then I let the streak rest a few minutes. Be careful because this steak is so thin it cools quickly.
I made a homemade pico. Just a simple tomato, onion, lime juice, garlic, cilantro and a splash of orange. I have also bought a peach salsa that was awesome with this combo. I used white corn tortilla shells that I grill to heat them up.
